I call it spinning bread ... flower guy calls it 'chinese pizza' whatever you will it makes a great breakfast or lunch and the locals sell it everywhere from the back of their bikes with hot plates to little stall's and even from inside the french supermarket giant 'Carrefour' stores. However some don't have the spinning apparatus required to make one of beijing's finest. It's made from a pancake style mix... a cup full is thrown on to a spinning hot plate and cooked, due to the circumferential forces the pancake is ultra thin .. an egg is then cracked onto it whilst in motion and spread out with a wide custom spatula tool ... it's then flung across to the folder who puts some lettuce, various spices and chili paste (if wanted) and a rice cracker type thing... it's then folded and packed into a little plastic bag. All for just 3 Quai! (about 60 cents AUD) ... oh and look! thats hackett.. his retirement made the front page news of china daily! |

| This is the husband and wife team whom make the best spinning bread in liuliqiao (imo). The spinning is done by hand and they sell out every day as many eggs as they can carry in there and there is almost always a queue of about 2 - 3 people waiting. There are plently of competing sellers but not all spin that wheel! some just have the old stationary hot plate! how boring! He does the spinning and egg cracking and flings em over to her. She adds the required condiments and you just throw your money in a little box out the front ... they dont handle the money at all. |
